my lovely chocolatechip-hazelnut banana bread

  • 2cups all purpose flour
  • 3/4 cup sugar
  • 3/4 tsp baking soda
  • 1/2 tsp fine sea salt (or table)
  • 1 cup chopped hazelnuts/filberts (coarse or fine… what ever you prefer)
  • 1 cup chocolate chips
  • 3 very ripe bananas. peeled and mashed (roughly 1 1/2 cups)
  • 1/4 cup milk
  • 2 large eggs. lightly beaten
  • 1/3 cup canola oil
  • 1 tsp vanilla extract
  1. grease and flour loaf pan. (9 by 5ish). place baking rack in lower 3rd of oven. preheat to 350F i know it makes it easier to do this all first, but every time i bake it seems this is always my last step. ha
  2. in large bowl. combine flour. sugar. bsoda. salt. hazelnuts and chocolate chips. toss to mix thoroughly. i sift the dry ingredients before adding hazelnuts and cchips. helps avoid clumps of flour ect.
  3. in another bowl. mix bananas. milk. eggs. oil. and vanilla, with a wooden spoon. combine wet mix with dry by folding with a rubber spatula until chunky. scoop batter into pans. once settled into pan run a trail of brown sugar down the middle. this creates a soft crust once baked. i allow my batter to be quite chunky. it allows for a fuller texture when baked. if you’re confused by the folding technique youtube has a beautiful explanation.
  4. bake until firm and golden brown. approx. one hour. make sure to check on loafs every ten minutes if further baking is required. every oven is different. i usually use a butter knife to test the middle as a toothpick isn’t long enough. (a sishkabob stick would be best if handy though). it should be removed with nothing sticking. cool for 5mins.

this loaf refrigerates beautifully when tightly wrapped for up to one week. it’s my fall back for housewarmings. going aways. and just a cozy coffee date with friends… also the best way i could possibly spend my midnight kitchen endeavors is baking these as a morning peace offering. ha!
